Chiang Rai is a town where you can eat northern food all day without repeating yourself. Locals tend to start the morning with khao soi or khanom jeen nam ngiao, then move on to full Lanna restaurants for lunch and dinner — gaeng hung lay, gaeng kae, nam prik ong, nam prik num and sai ua. Late at night, plenty of people end up at a lab shop. We've split this list by meal, so even if you only have a day or two in Chiang Rai, you can taste the full range of northern flavors.
One honest note up front: northern food is very much a matter of personal taste. Some shops make a rich coconut-milk broth, others a clearer, tangier one. Khao Soi & Nam Ngiao — Morning to Afternoon
Chiang Rai khao soi comes in two styles: a rich coconut-milk broth and a lighter, clearer one. Many shops open in the morning and sell out before afternoon. Nam ngiao usually comes with khanom jeen (fresh rice noodles) — a lightly sour, orange-tinted broth colored by dried kapok flowers, eaten with pork cracklings and fresh greens. It's a northern breakfast favorite.
Khao Soi Por Jai
A long-standing Chiang Rai-style khao soi shop in the town center. The coconut-milk broth is fragrant with curry paste and well balanced rather than sharp — locals have eaten here for years. Beyond khao soi, you can add nam ngiao, sai ua and naem mok.
Khao Soi Thao Kae Ek (Wat Phra Kaew)
A well-known shop beside Wat Phra Kaew with a rich, bold, spice-fragrant broth. There's plenty to choose from — chicken drumstick, pork ribs, stewed beef — plus self-serve pickled greens. It's only about 160 m from Wat Phra Kaew, so it's an easy stop before or after visiting the temple.
Khao Soi Mae Phimphon (across from Wat Rong Khun)
An original-recipe khao soi shop that's been going for over 40 years, with fresh noodles and fresh coconut milk. You can get chicken, beef or pork khao soi, or a version without noodles. It sits right across from the entrance to Wat Rong Khun — a handy stop on a White Temple day.
Khao Soi Pa Loi
A khao soi shop over 40 years old in the Huai Khrai area, before Mae Sai. People like to stop here on the way up to Doi Tung or toward the border. There's coconut-milk, chicken and beef khao soi, plus a khanom jeen nam ngiao that many reviewers rate. Homey setting, friendly prices.
Breakfast tip
Many old-school khao soi shops close around 3 pm and some sell out earlier. If you've got a famous one in mind, going before noon is the safer bet — and keep some cash on you, since most small shops still don't take transfers everywhere.

Lanna Restaurants, Gaeng Hung Lay & Sai Ua — Lunch to Dinner
When you want northern food as a full spread, Chiang Rai's Lanna restaurants range from relaxed riverside spots on the Kok River to Lanna teak houses with khantoke dining. Don't miss gaeng hung lay — sweet, salty and lightly sour with a hit of ginger — plus nam prik ong, nam prik num with steamed vegetables, and grilled sai ua fragrant with herbs.
Lu Lam Rop Wiang
A long-running northern restaurant open since 1981, set on a floating deck over the Kok River with lovely evening views. Standouts are gaeng hung lay, stir-fried minced pork lab, gaeng pak kat jo with pork ribs, and nam prik nam pu. It's a regular stop for both locals and food-TV crews.
Phu Lae
An in-town northern restaurant with a proper sit-down feel and comfortable air conditioning — good for family meals or groups. The northern menu is complete: gaeng hung lay, nam prik num, nam prik ong, sai ua, naem and mu yo. Open late.
Tha Nam Phu Lae
A riverside Lanna restaurant that Chiang Rai locals rate as one of the better local-food spots, focused on regional ingredients and genuine northern dishes. Airy, riverside setting — good for a long lunch or a relaxed dinner.
Tok Tong
A Lanna restaurant that's been part of Chiang Rai for years, in a two-storey teak house. You can sit at tables inside or do khantoke-style on the rear terrace. In the evening there's traditional dance and kham mueang music — a good pick for groups who want northern culture along with the food.
Khrua Mengrai
A small northern restaurant making its own khao soi, nam ngiao, gaeng hung lay and sai ua, served all day. It's an easygoing spot locals drop into — nothing fancy, just familiar northern flavors.
How to order good gaeng hung lay
Good gaeng hung lay is sweet-salty and balanced, fragrant with sliced ginger, with pork belly that's tender and falling apart but not greasy. It pairs best with hot sticky rice. If the shop has nam prik num and pork cracklings, order them as sides to round out the northern flavors.
Lab Kua & Gaeng Kae — Bold Northern Plates
In Chiang Rai, eating lab is an everyday thing — especially lab kua, where northern lab spices are stir-fried until fragrant for a bold, fiery flavor, eaten with sticky rice and fresh greens. Many of the town's lab shops have been around for ages and serve other northern dishes like gaeng kae and ork pla on the side.
Lab Sanam Kila
A northern lab shop that's been with Chiang Rai for over 20 years. Standouts are stir-fried beef lab, gaeng pak kat, and fried chicken with makhwen (a distinctive aromatic pepper). Locals meet up here for lunch and dinner alike.
Lab Soi 1 (Ban Nam Lat)
A well-known lab shop in the Ban Nam Lat area near the provincial hall, open about 26 years. Favorites include stir-fried pork lab, stir-fried beef lab, gaeng pak chiang da, gaeng kae with frog, and ork pla khang. It's a bold-flavored northern shop locals genuinely frequent.
