But Phayao has northern restaurants that have been cooking the same way for decades, with home-style flavors that haven't been sweetened up to please visitors from Bangkok. Some have sold khao soi for 40 years and become a place locals meet up; others sit right on Kwan Phayao lake, where you get the view and a full northern meal in one go. Khao Soi Saeng Phian
An old khao soi shop that's been part of Phayao for more than 40 years, on Tha Kwan Road in the old town. The broth is thick and well-rounded the traditional way, with chicken khao soi, beef khao soi, and khanom jeen nam ngiao or nam ya to switch it up. It's the first place locals think of when a friend from out of town visits. Go before early afternoon — it sells out fast.
Khao Soi Him Kong
A standout khao soi shop in Dok Khamtai, across from the Dok Khamtai municipal office. Fragrant, spiced broth with a generous pile of crispy noodles, plus chicken and beef khao soi. What a lot of people come for, though, is the khanom jeen nam ngiao and nam ya. Local prices, and you get your money's worth.
Khao Soi Suk Tae
A spot in the Kwan Phayao lake area with more than 70 dishes — start with khao soi, then move on to grilled prawns, seafood, larb, and plenty of other northern plates. Great if you come as a group and want to order a bit of everything in one meal. Roomy and relaxed.
Khao Soi The Bridge
A khao soi shop tucked down a side lane behind Municipal School 5 — a small place that younger locals and the café crowd like to check in at. The broth is medium, not too intense, so it suits people who don't handle much heat. Short hours, late morning to afternoon; show up too late and it may be gone.
Chidlom Chom Kwan
A lakeside spot on Kwan Phayao with tables both indoors and out by the water. Sitting outside around sunset is the way to do it. The northern dishes people order most are gaeng hang lay, duck larb, and khao soi, alongside the house tom yum with giant featherback fish. Good for a long, leisurely dinner with a view.
Aurora Kitchen
A lakeside spot on Kwan Phayao with a wide view over the water. The northern standouts are nam prik num with fresh veg, sai ua, grilled-fish miang, and a jungle curry with featherback fish balls. Easy for a family or a group of friends, open from late morning into the evening.
So Good Phayao
A lakeside spot doing home-style northern food with fresh ingredients. The dishes to get are nam prik num, lon pla som (a creamy fermented-fish dip), and ho mok seafood served in young coconut. It tastes like home cooking, prices aren't steep, and it's good for an easy lunch.
Baan Ton Tao
A half-café, half-northern-restaurant with a quiet, leafy feel, focused on traditional home-style northern food — sai ua, gaeng hang lay, and several kinds of chili dip. They grow a lot of their own vegetables, and you can finish with coffee and cake in the same place. Open Tuesday–Sunday.
Krua Country Kam Kin Mueang
A local-food spot on Kwan Phayao whose name spells out the point — "kin mueang," meaning proper northern food: nam prik num, nam prik ong, sai ua, crispy pork rind, and seasonal home-style curries. Good if you want a full spread of northern dishes with a lake view.
La-Awn Nam Ngiao
A shop that makes nam ngiao the headliner — an orange broth from kapok flowers, lightly sour and well-balanced, ladled over khanom jeen or rice noodles and eaten with crispy pork rind and fresh veg. It's the kind of northern breakfast that's light on the stomach but full of flavor — a good way to start the day before heading out.
How to eat well for less
Most khao soi and nam ngiao shops in Phayao are morning places that sell out by two or three in the afternoon. If you've got your eye on an old shop like Saeng Phian, go before noon. Save the lakeside spots for dinner instead — you'll get the sunset view and more for your money.

Northern Phayao dishes worth ordering
If it's your first time in Phayao and you're not sure what to order, these are the real backbone of northern Thai food. Order along these lines and you'll cover the full range of flavors in one meal.
- Khao soi — egg noodles in a coconut-curry broth built on northern curry paste, topped with crispy fried noodles, with chicken or beef. Eaten with pickled mustard greens and shallots; squeeze in some lime to taste.
- Khanom jeen nam ngiao — an orange broth from kapok flowers, lightly sour, with pork blood cubes and pork rib, ladled over rice noodles and eaten with crispy pork rind and fresh veg. A popular breakfast.

Aim for Saeng Phian, Him Kong, or The Bridge, and go before noon so you make it before they sell out. Easy on the wallet at ฿40–70 a bowl.
