Short answer: Both are former capitals and UNESCO historical parks. Choose Ayutthaya if you want somewhere close to Bangkok (day-trippable), livelier, with ruins amid a working city. Choose Sukhothai for an older, more manicured and serene park that is lovely to cycle — but it is farther (lower north).
