Which day trips from Bangkok work without a car?

Ayutthaya is easiest by train or minivan; Amphawa and Bang Saen have minivans and buses to the center; and Kanchanaburi has the scenic train line. Khao Yai and Ratchaburi are easier with a car or rental, as the sights are spread out.

Which are truly fine as a single day out-and-back?

Ayutthaya, Amphawa, Bang Saen and Ratchaburi (Damnoen Saduak) are comfortable out-and-back as they are close and the main sights fit one day, while Kanchanaburi and Khao Yai work too but one overnight lets you see more.

Where is the nearest beach trip from Bangkok?
