What you need to order here is all about beef. Larb neua (minced beef larb) and koi neua (raw beef koi) are the duo MICHELIN singles out as the stars — full-on Isan flavour that needs no extra seasoning. Next up is tom saep neua, a hot-and-sour beef and beef offal soup that warms you from the chest out, with just the right sour-spicy kick. If you like something chewier, there's fragrant fried neua daet diao (sun-dried beef), and if you want to try something harder to find elsewhere, the mok mong mu (pork brain mok) is what locals order on repeat.
