If you want to taste what happens when a single ingredient is stretched across every part of itself, Mahaniyom Cocktail Bar is the answer. Tucked on the second floor above nose-to-tail restaurant 100 Mahaseth in the Si Phraya area of Bang Rak, it climbed to No.18 on Asia's 50 Best Bars 2024 and has stayed a fixture on the extended 51-100 list. It was founded by two seriously talented bartenders, Ronnaporn 'Neung' Kanivichaporn, named BAD Bartender of the Year 2024, and Chennarong 'Jan' Bhumichitr. Their idea, called the Resourceful Cocktail, takes one ingredient and uses all of it, from flesh to peel to leftovers, building a single glass with several layers of flavour.
The roughly twelve signature drinks are each named after their star ingredient. The one people talk about most is Cow, blending brandy and red wine with brown butter, beef fat, clarified milk and a blue-cheese air, brightened by Thai mulberry. Squid pairs vodka, mezcal and sake with dried squid, squid ink, clarified tomato juice and a pickled-ginger cordial. Orange leans on house-made orange-infused vermouth and is garnished with chips made from the leftover peels. Drink through a few and the no-waste philosophy stops being a slogan and starts making sense on the palate.
The room itself is loud and colourful, mixing Asian design with a hint of Moroccan souk, with a neon tiger on the wall that everyone photographs. It suits people who want a story in the glass, not just a pretty pour. The easiest way in is MRT Sam Yan, then a short taxi ride or walk toward Maha Set Road; the bar sits one floor above 100 Mahaseth. Booking ahead is smart, especially on Friday and Saturday nights, since seating is limited and fills quickly.
