The shop has been part of the city for almost 50 years, open since around 1977, and today it's run by the third generation — Chonlada and Sudarat Wongmanotham — who still follow the recipe passed down from their grandmother, who once sold guay jub in the Wang Burapha area of Bangkok before moving up to settle in Chiang Mai. The shop's heart is really two things. First is the spice broth — rich and fragrant in the old Vietnamese-Chinese guay jub style, the kind that warms you up nicely against a cool Chiang Mai morning. Second is the crispy pork, marinated and fried fresh in-house every day: they pick grade-A pork belly and take a full 4 hours to prepare it, so the skin turns out crisp and puffed while the meat underneath stays tender and juicy. This crispy pork is exactly what people queue for — pile it on top of your guay jub, or order it straight over rice as khao moo krob and it's still worth it. Regulars also like to add braised pork rib rice cooked until tender, stuffed minced pork, and fresh spring rolls, which are getting harder to find at guay jub shops these days. You can build a whole food morning around it: start with a hot bowl of guay jub, walk it off toward Kad Luang, pick up some souvenirs to take home, then loop through the old shophouse cafés around Chang Moi that have turned this into one of the city's trendier pockets.
