Ask anyone from Khon Kaen which beef noodle shop has been part of the city the longest, and the name "Hia Joi" comes up almost every time. The story starts back in 1986, from a small stall run by Hia Joi in Tesaban 1 fresh market in the middle of Khon Kaen, selling beef noodles day after day until the broth recipe became a household staple. By 2014, Hia Joi passed the recipe on to his son, Pi Ball, who took over as the second generation, moving the shop to Sila subdistrict, across from Sri Phatcharin Camp, and still boils the same broth every morning — simmered from beef bones and stewed beef, dozens of kilos a day. That consistency is exactly why the MICHELIN Guide has handed it a Bib Gourmand two years running, including the 2026 edition — an award that means "genuinely delicious, genuinely good value," which fits a noodle shop next to an army camp perfectly.
The dish to start with is the clear beef noodle soup, bowls from just THB 70. The broth, simmered long from beef bones, gives a natural sweetness without needing much else — one sip and you can tell this is a recipe built up since the father's generation.
