Isan is Thailand's boldest, most fearless cooking, and the Michelin inspectors chased it right back to the source. Nine Bib Gourmand kitchens make up this group, led by Krua Khun Nid in Udon Thani and its crisp, tangy fried pla som. From there it is Laab Somphit in Nakhon Ratchasima, turning out proper Yasothon-style laab, koi and nam tok with grilled beef tongue, and Som Tum Jinda in Ubon with its papaya salad topped by fluffy fried catfish.
