Of every restaurant in the MICHELIN Guide Thailand 2026, Pae — or Pae Pochana — is probably one of the best hidden. It's not in a mall, it's not even in Bangkok, but tucked inside Rahaeng Market, a century-old wooden canal-side market in Lat Lum Kaeo, Pathum Thani. MICHELIN itself calls it a "hidden eatery" inside this old market, and has awarded it Bib Gourmand since the 2023 selection, carried through to the 2026 edition. What MICHELIN loves is the traditional Thai-Chinese cooking this family has sold for over 50 years by MICHELIN's own record, while several Thai media outlets say the family shop has actually been running for more than 80 years. However you count it, this is a place that has cooked the same set of dishes for generations, and done it well enough that MICHELIN inspectors were willing to drive out of the city to eat here.

The dish that comes up first is minced featherback fish and pork wrapped in tofu sheets and fried, known locally as moo song khreung or moo jaw — a dish MICHELIN recommends outright in the guide. Paired with it is spicy stir-fried featherback fish, another dish MICHELIN singles out for praise. Regular Thai customers also add fried sun-dried snakehead fish (at THB 410, the priciest dish on the menu but worth it) along with a pot of tom yum with snakehead fish. Notice that featherback fish and snakehead fish are the heart of the shop, which fits perfectly with its canal-side location. Most of the standout dishes run just THB 160–240, and a full table for a group averages out to THB 250–500 a head. The atmosphere is half the experience, since seating spills onto the wooden canal-side walkway of the old market — sitting there eating hot moo jaw while watching the canal water go by is a sight you won't find at a MICHELIN restaurant in the middle of the city.

One thing worth knowing before you go: the shop sells lunch only, open daily 09:00–14:30, but the popular dishes often sell out by 1pm, and on weekends the queue can run up to an hour and a half. Regulars always try to arrive before 11am. Another thing to check is that the shop closes about 2 unannounced days a month, announced on its Facebook page — check the page before you set off so you don't make the trip for nothing. It holds a 4.4 rating from nearly a thousand voices, and reviews on Wongnai are still coming in steadily through mid-2026 — proof this century-old shop shows no sign of slowing down.

Pae Pochana is a genuine budget-friendly Bib Gourmand — average spend is THB 250–500 a head, with most standout dishes at THB 160–240 and only the fried sun-dried snakehead fish reaching THB 410. No advance booking needed, since the shop is mainly walk-in. If you want to call ahead and check, use 082-250-9191 (a third-party AutoReserve listing exists, but calling direct is more reliable). The one thing to plan around is timing — the shop is open every day but sells only at lunch, 09:00–14:30, and the popular dishes often sell out by around 1pm, with weekend waits running up to 1.5 hours. The safe formula is to arrive before 11:00.

It sits inside Rahaeng Market, a century-old wooden canal-side market in Lat Lum Kaeo, Pathum Thani. There's no train line out here, so you'll need to drive or grab a ride, in exchange for eating canal-side on the wooden walkway of an old market. One thing to watch for: the shop closes about 2 unannounced days a month, announced on its Facebook page — check the page every time before you head out.
