Of every restaurant in the MICHELIN Guide Thailand 2026, Pae — or Pae Pochana — is probably one of the best hidden. It's not in a mall, it's not even in Bangkok, but tucked inside Rahaeng Market, a century-old wooden canal-side market in Lat Lum Kaeo, Pathum Thani. MICHELIN itself calls it a "hidden eatery" inside this old market, and has awarded it Bib Gourmand since the 2023 selection, carried through to the 2026 edition. What MICHELIN loves is the traditional Thai-Chinese cooking this family has sold for over 50 years by MICHELIN's own record, while several Thai media outlets say the family shop has actually been running for more than 80 years. However you count it, this is a place that has cooked the same set of dishes for generations, and done it well enough that MICHELIN inspectors were willing to drive out of the city to eat here.
The dish that comes up first is minced featherback fish and pork wrapped in tofu sheets and fried, known locally as moo song khreung or moo jaw — a dish MICHELIN recommends outright in the guide. Paired with it is spicy stir-fried featherback fish, another dish MICHELIN singles out for praise. Regular Thai customers also add fried sun-dried snakehead fish (at THB 410, the priciest dish on the menu but worth it) along with a pot of tom yum with snakehead fish.
