If you follow the food world at all, the name Umberto Bombana probably already rings a bell — he's the chef behind 8½ Otto e Mezzo Bombana in Hong Kong, the only three-MICHELIN-star Italian restaurant in the world outside Italy, and the man they call "The King of White Truffles." So when he opened Cannubi by Umberto Bombana at Dusit Thani Bangkok, it was a big deal for Italian-food lovers here from day one. And the result speaks for itself — the MICHELIN Guide Thailand 2026 awarded it a star immediately, making Cannubi the first Italian restaurant in Thailand's history to hold a MICHELIN star. The person actually running the kitchen day to day in Bangkok is Andrea Susto, an Italian chef who has worked alongside Bombana for years — so you get both the mentor's vision and the protégé's hand on every plate.
The heart of the restaurant is a 7-course tasting menu at THB 5,500++ (THB 7,400++ with a 3-glass wine pairing), which moves through seasonal Italian ingredients course by course. But the season everyone's really waiting for is white truffle season — a special seasonal menu that's Bombana's own signature, true to his nickname. If the tasting menu is outside your budget, there's also a set lunch and à la carte dishes — a lighter way in that still carries the same kitchen's touch. The setting is full hotel fine dining, on the L Floor of Dusit Thani Bangkok in the Silom/Rama IV area, with a clear dress code — elegant attire, no shorts, sandals, or flip-flops. It suits a celebration dinner where you want everything to feel right from the first step in.
What makes this restaurant special is its place in history — Thailand has had good Italian restaurants for a long time, but none had ever won a MICHELIN star until Cannubi planted its flag in 2026. It's also a "NEW" entry that took a star in its very first year in the guide. If you want to know what MICHELIN-approved Italian food tastes like without flying to Hong Kong or Milan, this is the closest answer. And with the hotel's direct connection to the Si Lom MRT station, getting to a meal at this level is remarkably easy.

The main cost is the 7-course tasting menu at THB 5,500++ per person, or THB 7,400++ with a 3-glass wine pairing (++ = 10% service plus 7% VAT). A set lunch and à la carte are available as lighter options. Book through TableCheck for Dusit Thani Bangkok, by phone at +66 2 200 9000, or by email at cannubi.dtbk@dusit.com. A deposit of THB 2,000 per person is required (full prepayment on festive days), the restaurant asks for bookings at least 3 hours ahead, and tables are held for only 15 minutes past the reservation time — arrive later than that and you risk losing your table.
The restaurant is open Wednesday to Sunday, lunch 12:00–14:30 (last order 14:00), dinner 18:00–22:00 (last order 21:30), closed Monday and Tuesday, which means weekend dinner slots always fill first — book early if you want one. Getting there is easy: take the MRT to Si Lom station, which connects directly into the hotel, or it's just a few minutes' walk from BTS Sala Daeng. Don't forget the dress code — elegant attire, no shorts or sandals.
