If there's one restaurant in Phuket that truly tells the island's story through its plates, it's PRU. The name is short for Plant, Raise, Understand — grow it yourself, raise it yourself, understand the ingredient yourself — and that's not just a pretty slogan. The restaurant runs its own organic farm, Pru Jampa, in the north of the island, and nearly every vegetable, herb, and pickle on the table traveled straight from its own plots. The seafood comes directly from local Andaman fishermen. At the helm is Dutch chef Jimmy Ophorst, who settled in Phuket and spent years tracing Thai ingredients back to their source. The result is that PRU became the first and only restaurant in Phuket to win a MICHELIN star, holding it continuously from the 2019 guide all the way to 2026 — and it also carries a MICHELIN Green Star for sustainability.
The food here is modern fine dining built on serious farm-to-table principles, served as a tasting menu that moves through ingredients from the Pru Jampa farm and the Andaman Sea course by course. The vegetable and pickle plates from the restaurant's own organic farm are what most guests remember best — they flip the idea of how far a humble Phuket-grown vegetable can go in the hands of a star kitchen. Seafood lovers get fish and shellfish from local fishing boats, cooked to let the ingredient itself be the star. In late 2023, the restaurant moved into a new home at the entrance to the Trisara resort in Cherngtalay, complete with a theater-style open kitchen where you can watch the chefs work like a live show, and a sea view that turns an early dinner seating into a sunset meal in its own right.
The restaurant's context makes it even more interesting when you consider that Phuket has been named a UNESCO Creative City of Gastronomy, yet most visitors' image of the island's food still stops at Hokkien noodles and oh-tao in the old town. PRU fills in the other side of that coin — proof that the island can grow its own excellent produce rather than leaning on imported ingredients the way many seaside fine-dining spots do. If you're already planning to stay around Bang Tao, Surin, or northern Thalang, this meal is a great excuse to dress up for one night, because it's the only Michelin star on the whole island, and the one that tells Phuket's story better than anywhere else.
Pru
PRU sits at the entrance to the Trisara resort on Sri Soonthorn Road, in the Cherngtalay area of Thalang district, on the north side of Phuket island, close to Bang Tao and Surin beaches. Pricing is a tasting menu: the PRU Experience runs 7,200++ baht per person, while lunch is a lighter Lunch Experience at 4,000++ baht per person. Dinner runs Tuesday to Saturday, with seatings at 18:00 / 18:30 / 19:00; lunch is Friday and Saturday only, with seatings at 12:30 / 13:00 — closed Sundays and Mondays, so don't mix up the days.

During high season (November to April) seats fill up fast, so book several weeks ahead. If you can choose, lock in the 18:00 seating so you get to eat with the Andaman sunset as your backdrop. The easiest way to get there is by car or taxi, using Trisara as your landmark. If you're staying around Bang Tao, Surin, or Laguna, it's just a few minutes' drive; if you're staying in Patong or Phuket Town, allow around 40 minutes to an hour depending on traffic.
