Ask a true Korat local to take you for beef noodles in the old town, and "Nub Phocana" on Chomphon Road comes up fast. This shop sits near the Wat Burapha night bazaar, right in the middle of Korat's old town where the shophouses still look the way they always have. The owners are a family who moved here from Suphan Buri and settled down cooking beef noodles until the shop became a local institution on this street. And it's in 2026 that the MICHELIN Guide caught up with it, awarding a Bib Gourmand as one of Thailand's 13 new Bib restaurants this year — and Korat locals are especially proud that Nub is the only new Bib in Korat this year, an ordinary shophouse noodle shop standing in for the whole province.

The heart of the shop is the clear broth simmered over a charcoal stove. They really do simmer the beef and offal over charcoal the old-fashioned way, so the broth carries a faint smoky note that a gas burner just can't give you. One sip and you understand why this place has lasted so long.
