Ask a true Korat local to take you for beef noodles in the old town, and "Nub Phocana" on Chomphon Road comes up fast. This shop sits near the Wat Burapha night bazaar, right in the middle of Korat's old town where the shophouses still look the way they always have. The owners are a family who moved here from Suphan Buri and settled down cooking beef noodles until the shop became a local institution on this street. And it's in 2026 that the MICHELIN Guide caught up with it, awarding a Bib Gourmand as one of Thailand's 13 new Bib restaurants this year — and Korat locals are especially proud that Nub is the only new Bib in Korat this year, an ordinary shophouse noodle shop standing in for the whole province.
The heart of the shop is the clear broth simmered over a charcoal stove. They really do simmer the beef and offal over charcoal the old-fashioned way, so the broth carries a faint smoky note that a gas burner just can't give you. One sip and you understand why this place has lasted so long. The dish MICHELIN singles out directly is the mixed boiled beef plate — stewed beef, fresh beef, meatballs, and offal all boiled together on one plate, tossed with dark soy sauce and a squeeze of fresh lime — a simple salty-sweet-sour combination, but with the stewed beef so tender from a whole morning over charcoal, it's a dish that makes you understand what Bib Gourmand means the moment you taste it. If you're a broth person, the clear beef noodle soup is another standout — clear but deep in flavor, no heavy seasoning needed to taste good.
Another draw is the location. Chomphon Road is the artery of Korat's old town — it's not far to walk from the shop to pay respects to Ya Mo at the Thao Suranari Monument. This area still has old temples, a morning market, and by evening the Wat Burapha night bazaar to stroll through. So the plan writes itself: pay respects to Ya Mo in the morning, come here for beef noodles late morning, spend the afternoon wandering the old town. At sixty to seventy baht a bowl, you're eating MICHELIN-level noodles at street-food-plate prices — and that's exactly what makes a provincial Bib Gourmand more fun than a star in the capital.
Nub
Nub Phocana sits on Chomphon Road in Korat's old town, near the Wat Burapha night bazaar, an easy walk from the Thao Suranari Monument (Ya Mo). Prices are very light, around THB 60-80 a bowl. Open Monday to Saturday, roughly 08:30/09:30 to 15:00, closed Sundays. No booking needed — just walk in and take a seat. The best time to go is late morning before noon, since the shop only sells during the morning-to-afternoon window and some of the stewed beef can run out before 3pm — go late and you might miss the best cuts. Getting around central Korat is easiest by car or a ride-hail drop-off on Chomphon Road; park along the old town streets and it's an easy walk from there. Fold it into a late-morning meal after paying respects to Ya Mo, or a stop before wandering the old town market — either way it fits right in. Order the mixed boiled beef plate to share, plus a bowl of clear beef noodle soup each, and you're looking at under 200 baht a head for a taste of Korat's newest Bib Gourmand.
